  • 1 cup (120g) self-rising flour (or 1 cup all-purpose flour + 1 ½ tsp baking powder + ¼ tsp salt)
  • 1 large egg, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, combine 1 cup (250g) of Biscoff spread with 1 large egg. Mix with a hand mixer or wooden spoon until smooth and uniform, about 1-2 minutes.
  3. Gradually fold in 1 cup (120g) of self-rising flour until just combined. The dough will be thick and sticky. Avoid overmixing.
  4. Using a tablespoon or small cookie scoop, drop dough balls onto the prepared baking sheet about 2 inches apart. Flatten each slightly to about 2 inches in diameter.
  5. Bake in the center of the oven for 12-15 minutes until cookies spread slightly and develop golden, crispy edges. Watch closely to avoid over-browning.
  6. Remove from oven and let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature egg for easier mixing. Avoid overmixing after adding flour to keep cookies tender. Flatten dough balls evenly for uniform baking. Cool cookies on baking sheet before transferring to rack to maintain crispness. Refrigerate dough for 10 minutes before baking to control spread. For dairy-free or vegan version, use dairy-free Biscoff spread and flax egg (1 tbsp ground flaxseed + 3 tbsp water).
