These creamy matcha coconut almond butter bliss cups are a quick, no-bake treat that’s both indulgent and nourishing. Made with just six simple ingredients, they’re perfect for a healthy dessert or afternoon pick-me-up.

  • 1/2 cup coconut oil, melted
  • 1/4 cup creamy almond butter
  • 3 tablespoons maple syrup
  • 1 1/2 teaspoons matcha powder
  • 1/4 cup unsweetened shredded coconut
  • Pinch of sea salt
  • Extra shredded coconut for topping (optional)
  • Flaky sea salt for topping (optional)
  • Chopped dark chocolate for topping (optional)

Instructions

  1. Melt the coconut oil in a small saucepan over low heat or in a microwave-safe bowl in 15-second bursts until fully liquid.
  2. Remove from heat and whisk in the matcha powder vigorously until fully dissolved and smooth, about 30 seconds.
  3. Whisk in the almond butter and maple syrup until the mixture is completely smooth and glossy.
  4. Fold in the shredded coconut until evenly distributed.
  5. Spoon the mixture into a mini muffin tin, filling each cup about three-quarters full. Tap the tin gently to release air bubbles.
  6. Sprinkle extra shredded coconut and a tiny pinch of flaky sea salt on top of each cup. Press toppings in gently.
  7. Freeze for at least 20 minutes, or until the cups are completely firm.
  8. Transfer set cups to an airtight container, layering with parchment paper if stacking. Store in the freezer for up to 3 weeks.

Notes

Let the melted coconut oil cool for 30 seconds before adding matcha to prevent clumping. Stir almond butter well before measuring. For best texture, serve straight from the freezer, letting sit at room temperature for 2-3 minutes if frozen longer. Store in an airtight container to prevent freezer burn.
