  • 1 cup authentic tzatziki (store-bought or homemade, thick Greek-style yogurt with cucumber and garlic)
  • 4 ounces softened cream cheese
  • 1 small yellow onion, finely chopped
  • 2 cloves minced garlic
  • Zest and juice of 1 lemon
  • 2 tablespoons chopped fresh dill (optional but recommended)
  • 1 cup shredded mozzarella or mild white cheddar cheese
  • 1 tablespoon olive oil (extra virgin preferred)
  • Salt and pepper to taste
  • ½ cup panko or regular breadcrumbs (optional, omit or substitute for gluten-free)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish with olive oil.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the finely chopped onion and cook for 3-4 minutes until translucent. Add minced garlic and sauté for another minute until fragrant. Remove from heat and let cool slightly.
  3. In a large bowl, combine softened cream cheese and tzatziki. Stir until smooth and creamy.
  4. Add lemon zest, lemon juice, chopped dill, sautéed onions, and garlic to the bowl. Season with salt and pepper to taste and mix well.
  5. Fold in the shredded cooked chicken until evenly coated with the sauce.
  6. Pour the chicken mixture into the prepared baking dish and spread evenly.
  7. Sprinkle shredded mozzarella or cheddar cheese over the top, then add an even layer of breadcrumbs for a crispy crust.
  8. Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbly. Tent with foil halfway through if breadcrumbs brown too quickly.
  9. Let the casserole rest for 5-10 minutes before serving to set.

Notes

For gluten-free, omit breadcrumbs or substitute with crushed gluten-free crackers. To lighten, replace cream cheese with Greek yogurt. Use rotisserie chicken and store-bought tzatziki for convenience. Sautéing onions and garlic adds depth of flavor. Lemon zest is essential for brightness. Breadcrumbs can be tossed with olive oil before topping for a crispier crust. Avoid overbaking to keep chicken tender.
