Easy Cozy Butterscotch Banana Bread Recipe

This moist and tender banana bread is elevated with rich, buttery butterscotch chips that melt into gooey pockets of sweetness. It’s a simple, comforting recipe that comes together in about an hour and tastes like a warm hug on a cold day.

  • 3 large ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon (if using).
  5. Pour the dry ingredients into the wet ingredients and stir with a rubber spatula until just combined. A few streaks of flour are okay—do not overmix.
  6. Gently fold in 3/4 cup of the butterscotch chips, reserving about 1/4 cup for the top. Fold just until evenly distributed.
  7. Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle the remaining 1/4 cup of butterscotch chips on top.
  8. Bake for 50-60 minutes. At the 30-minute mark, check the bread—if the top is browning too quickly, tent it loosely with aluminum foil. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Let the bread cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best results, use very ripe bananas with lots of brown spots. Do not overmix the batter to avoid tough bread. If the top browns too quickly, tent with foil. The bread tastes even better on day two as flavors meld. Store wrapped tightly at room temperature for up to 4 days or freeze for up to 3 months.
