Easy Comforting Pierogi Meatball Skillet Heaven

A quick and comforting one-pan meal featuring tender pierogies, savory meatballs, and melted cheese in a rich, creamy sauce. Perfect for busy weeknights when you need something hearty and satisfying without a lot of fuss.

  • 1 pound ground beef (80/20 works best)
  • ½ cup breadcrumbs (plain or Italian, preferably panko)
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (16-ounce) package frozen pierogies (classic potato and cheddar recommended)
  • 1 cup beef broth (low-sodium)
  • ½ cup heavy cream
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, minced garlic, onion powder, smoked paprika, salt, pepper, and Worcestershire sauce. Mix with your hands until just combined. Roll into small meatballs, about 1 inch in diameter (around 20 to 24 meatballs). Set aside.
  2. Heat olive oil in a large skillet (12-inch recommended) over medium-high heat. Add the meatballs in a single layer (work in batches if needed) and cook for 4 to 5 minutes, turning occasionally, until browned on all sides. Transfer to a plate and set aside.
  3. In the same skillet, add the diced onion. Cook for 3 to 4 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the frozen pierogies to the skillet in a single layer. Cook undisturbed for 2 to 3 minutes to brown the bottom, then flip and brown the other side for another 2 minutes.
  5. Pour in the beef broth and scrape up any browned bits from the bottom of the pan. Bring to a simmer. Return the meatballs to the skillet, nestling them between the pierogies. Reduce heat to medium-low and simmer for 5 to 7 minutes, until pierogies are tender and meatballs are cooked through.
  6. Pour the heavy cream over the skillet and gently stir to combine. Sprinkle the shredded cheddar and Parmesan cheese evenly over the top. Cover the skillet with a lid or foil and cook for 2 to 3 minutes, until the cheese is melted and bubbly. If the sauce is too thin, simmer uncovered for another minute or two.
  7. Remove from heat. Garnish with fresh chopped parsley if desired. Let rest for 2 to 3 minutes before serving. Scoop into bowls and serve.

Notes

For best results, use low-sodium broth to control salt levels. Grate your own cheese for smoother melting. Let pierogies brown undisturbed for crispy edges. Add cream after broth has simmered and keep heat at medium-low to prevent curdling. Leftovers keep in the refrigerator for up to 4 days and can be frozen for up to 3 months.
