Easy Classic Russian Crab Salad for Gatherings

This Classic Russian Crab Salad is a quick, easy, and crowd-pleasing dish made with imitation crab, sweet corn, creamy eggs, and a tangy mayo dressing. Perfect for potlucks, barbecues, and holiday gatherings, it comes together in under 20 minutes and tastes even better the next day.

  • 1 lb (450g) imitation crab sticks, finely diced
  • 1 can (15 oz or 425g) sweet corn, drained
  • 4 large hard-boiled eggs, diced
  • 1/2 cup (75g) dill pickles, finely diced
  • 1/2 cup (120g) mayonnaise
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and black pepper to taste

Instructions

  1. Boil the eggs: Place 4 eggs in a small saucepan, cover with cold water by 1 inch. Bring to a boil, cover, turn off heat, and let sit for 10 minutes. Transfer to an ice bath for at least 5 minutes, then peel and dice.
  2. While eggs cool, finely dice 1 lb imitation crab sticks into 1/4-inch pieces.
  3. Drain the can of corn well in a colander; pat dry with a paper towel if desired.
  4. Finely dice 1/2 cup pickles into 1/8-inch pieces.
  5. Peel and dice the hard-boiled eggs into pieces similar in size to the crab.
  6. In a large mixing bowl, combine diced crab, drained corn, diced pickles, and diced eggs. Stir gently.
  7. Add 1/2 cup mayonnaise, 2 tablespoons fresh dill (or 1 teaspoon dried), and a generous pinch of salt and black pepper. Stir gently until evenly coated.
  8. Taste and adjust seasoning as needed. Add more mayo if the salad seems dry.
  9. Cover and refrigerate for at least 30 minutes before serving (overnight is best). Serve cold.

Notes

This salad tastes even better the next day. For best results, make it the night before. If the salad seems dry after sitting, add a tablespoon of mayo to refresh it. Do not freeze; the mayo will separate upon thawing.
