This Easy Bang Bang Fried Rice is a quick and delicious weeknight dinner that comes together in just 20 minutes. Creamy, spicy, and sweet bang bang sauce coats every grain of crispy rice and tender vegetables, making it better than takeout.

  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 4 cups cooked jasmine rice, day-old
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 3 large eggs, lightly beaten
  • 1 cup frozen peas and carrots
  • 1/2 cup frozen corn (optional)
  • 3 green onions, sliced (white and green parts separated)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/4 teaspoon white pepper

Instructions

  1. Make the bang bang sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Taste and adjust heat or sweetness as desired. Set aside.
  2. Prep your ingredients: Slice green onions, mince garlic, grate ginger, and beat eggs. Have everything ready before cooking.
  3. Heat a large wok or 12-inch skillet over high heat. Add 1 tablespoon vegetable oil and swirl to coat.
  4. Scramble the eggs: Pour beaten eggs into the hot pan. Let set for 30 seconds, then scramble until just cooked. Transfer to a plate and set aside.
  5. Cook aromatics: Add remaining 1 tablespoon vegetable oil and sesame oil to the pan. Add white parts of green onions, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  6. Add vegetables: Add frozen peas, carrots, and corn (if using). Stir-fry for 2-3 minutes until heated through and slightly charred.
  7. Add rice: Crumble day-old rice into the pan. Spread in an even layer and let sit undisturbed for 2 minutes. Flip and stir, then let sit another 2 minutes. Repeat until rice is heated through with crispy bits.
  8. Season rice: Drizzle soy sauce and oyster sauce over rice. Sprinkle with white pepper. Toss to coat evenly.
  9. Add eggs and sauce: Return scrambled eggs to the pan. Pour about half the bang bang sauce over everything. Stir gently to combine. Cook for 1 minute until hot.
  10. Finish and serve: Remove from heat. Taste and adjust seasoning. Garnish with reserved green onion tops. Serve immediately with extra bang bang sauce on the side.

Notes

Use day-old rice for best results. Fresh rice will become mushy. For crispy rice, let it sit undisturbed in the hot pan for 2 minutes before stirring. Adjust sriracha to control spiciness. The bang bang sauce can be made ahead and stored in the fridge for up to a week.
