  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Bloom the gelatin: Sprinkle 1 tablespoon of gelatin powder over 1/4 cup (60ml) of cold water in a small bowl. Let it sit for 5 minutes to absorb and soften.
  2. Prepare raspberry puree: In a blender or food processor, pulse 1 cup (125g) fresh raspberries until smooth. Strain through a fine mesh sieve to remove seeds if you want a silky texture. Set aside.
  3. Heat milk mixture: In a medium saucepan, combine 1 cup (240ml) whole milk and 1/4 cup (50g) granulated sugar. Warm over medium heat, stirring occasionally, until sugar dissolves and milk is hot but not boiling (about 5 minutes).
  4. Add gelatin: Remove milk from heat and whisk in the bloomed gelatin until fully dissolved. If gelatin doesn’t dissolve easily, return to low heat briefly, stirring constantly.
  5. Combine flavors: Stir in 1 teaspoon rose water, 1 teaspoon fresh lemon juice, and 1/2 teaspoon vanilla extract. Mix thoroughly.
  6. Whip heavy cream: In a separate bowl, whip 1/2 cup (120ml) heavy cream to soft peaks.
  7. Mix raspberry puree and milk mixture: Fold the raspberry puree gently into the milk and gelatin mixture until evenly blended.
  8. Fold in whipped cream: Carefully fold the whipped cream into the raspberry mixture, keeping as much air as possible for that dreamy texture.
  9. Chill: Pour the flummery into individual serving glasses or ramekins. Cover and refrigerate for at least 3 hours, or until set but still wobbly.
  10. Serve: Garnish with fresh raspberries or a light drizzle of rose syrup if desired. Enjoy chilled for best flavor and texture.
