Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the carrots into sticks about 3 inches long and ½ inch thick, keeping pieces uniform for even roasting.
  3. Chop the bacon into small 1-inch chunks.
  4. In a mixing bowl, whisk together maple syrup, olive oil, minced garlic, salt, pepper, and thyme to make the glaze.
  5. Add the carrots to the bowl and toss with half the glaze until well coated. Reserve the other half of the glaze.
  6. Arrange the carrots and bacon pieces in a single layer on a rimmed baking sheet, ensuring bacon pieces are not piled up.
  7. Roast for 20 minutes, then remove the pan and toss the carrots and bacon to flip them over.
  8. Drizzle the reserved glaze on top and stir again to coat evenly.
