Decadent Snickers Cinnamon Rolls: Easy Homemade Recipe

These Decadent Snickers Cinnamon Rolls are what happen when you take a classic, homemade cinnamon roll and give it a candy bar makeover. The dough is soft and fluffy, the filling is packed with that signature cinnamon-sugar goodness, and then you pile on all the Snickers-inspired toppings.

  • ยผ cup (50g) granulated sugar
  • 1 packet (2 ยผ tsp) active dry yeast
  • ยฝ teaspoon salt
  • ยฝ cup (120ml) whole milk, warmed to 110ยฐF
  • ยผ cup (60ml) water, warm
  • 3 tablespoons (42g) unsalted butter, melted
  • 1 large egg, room temperature
  • ยฝ cup (113g) unsalted butter, softened
  • ยพ cup (150g) packed brown sugar
  • 2 tablespoons ground cinnamon
  • 3 full-size Snickers bars (about 1.86 oz each), chopped
  • ยผ cup (60ml) heavy cream
  • ยฝ cup (120ml) caramel sauce
  • ยฝ cup (90g) semi-sweet chocolate chips
  • ยผ cup (30g) chopped peanuts
  • Optional: extra chopped Snickers pieces for garnish

Instructions

  1. Activate the Yeast: In a small bowl, combine the warm milk (110ยฐF), warm water, and 1 tablespoon of the granulated sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until it becomes frothy.
  2. Make the Dough: In a large mixing bowl or the bowl of your stand mixer, whisk together the remaining sugar, salt, and 3 cups of the flour. Add the melted butter, egg, and the yeast mixture. Mix on low speed until a shaggy dough forms. Add the remaining ยฝ cup of flour, ยผ cup at a time, until the dough pulls away from the sides of the bowl.
  3. Knead the Dough: If using a stand mixer, knead with the dough hook on medium-low speed for 5-7 minutes. If kneading by hand, turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. First Rise: Place the dough in a lightly greased bowl, turning once to coat. Cover with plastic wrap or a clean kitchen towel. Let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
  5. Prepare the Filling: In a small bowl, combine the softened butter, brown sugar, and cinnamon. Mix until smooth. Chop the Snickers bars into small, bite-sized pieces.
  6. Roll and Fill: Punch down the dough and roll it into a 12×18-inch rectangle on a lightly floured surface. Spread the cinnamon-butter mixture evenly over the dough, leaving a ยฝ-inch border on the long edges. Sprinkle the chopped Snickers pieces over the filling, pressing them in gently.
  7. Roll and Cut: Starting from the long edge, roll the dough tightly into a log. Pinch the seam to seal. Cut the log into 12 equal slices. Place the rolls cut-side up in a greased 9×13-inch baking dish.
  8. Second Rise: Cover the dish with plastic wrap and let the rolls rise for another 30-45 minutes, until puffy and touching each other. Preheat oven to 350ยฐF (175ยฐC).
  9. Add the Cream and Bake: Just before baking, pour the heavy cream over the rolls. Bake for 22-25 minutes, until golden brown. If tops brown too quickly, tent with foil halfway through.
  10. Add the Toppings: Let rolls cool for 10 minutes. Melt chocolate chips in a small saucepan over low heat. Drizzle melted chocolate over warm rolls, then drizzle caramel sauce. Sprinkle with chopped peanuts and extra Snickers pieces. Serve warm.

Notes

Do not skip the heavy cream poured over the rolls before bakingโ€”it keeps them soft and gooey. For make-ahead, assemble the rolls the night before, refrigerate, and let sit at room temperature for 30 minutes before baking. Use dental floss to cut the rolls cleanly.
