  • 1 cup (200g) dark chocolate chips or chopped dark chocolate (70% cocoa or higher)
  • ½ cup (120ml) coconut oil (unrefined or refined)
  • 34 tablespoons (45–60ml) maple syrup or honey
  • Pinch of sea salt (optional but recommended)
  • Optional mix-ins: ¼ cup chopped nuts (walnuts or pecans), shredded coconut, or 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. In a medium microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until mostly melted (about 1½ to 2 minutes). Stir until smooth.
  3. Add maple syrup or honey and a pinch of sea salt (if using). Stir vigorously until fully combined and glossy.
  4. Pour the mixture into the prepared pan. Spread evenly with a spatula. Tap the pan gently on the counter to release air bubbles.
  5. If using mix-ins (nuts, coconut, etc.), sprinkle them on top and press lightly.
  6. Refrigerate for at least 2 hours, or until firm (3–4 hours for best results). For a quicker set, freeze for about 45 minutes.
  7. Lift the fudge out using the parchment paper. Place on a cutting board and cut into 1-inch squares with a sharp knife. Wipe the knife clean between cuts for neat edges.
  8. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.

Notes

Use high-quality dark chocolate (70% cocoa or higher) for best results. The 2:1 ratio of chocolate to coconut oil (by volume) ensures perfect texture. For clean cuts, run the knife under hot water and dry it before slicing. The fudge can be made nut-free by omitting nuts. For a keto version, use sugar-free chocolate and a keto-friendly sweetener.
