These Nutella cupcakes feature a soft vanilla cake with a hidden molten Nutella center. The secret is freezing the Nutella before baking, creating a gooey, fudgy core in every bite.

Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) whole milk, room temperature
  • About 12 teaspoons (roughly ¾ cup) Nutella
  • ½ cup (113g) unsalted butter, softened (for frosting)
  • ½ cup Nutella (for frosting)
  • 2 cups (240g) powdered sugar
  • 2–3 tablespoons heavy cream or milk
  • Pinch of salt

Instructions

  1. Line a small plate or baking sheet with parchment paper. Scoop 12 heaping teaspoons of Nutella and roll into rough balls. Freeze for at least 30 minutes.
  2. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, beat softened butter and sugar with a hand mixer until light and fluffy, about 3-4 minutes.
  5. Add eggs one at a time, beating well after each. Beat in vanilla extract.
  6. With mixer on low, add dry ingredients in three additions, alternating with milk. Mix until just combined.
  7. Spoon about 1 ½ tablespoons of batter into each liner. Place a frozen Nutella ball in the center of each. Divide remaining batter over the Nutella balls, covering them completely.
  8. Bake for 18-22 minutes, until tops are golden and a toothpick inserted into the side comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For frosting: Beat softened butter and Nutella until smooth. Gradually add powdered sugar, then cream and salt. Beat until light and fluffy.
  10. Frost cooled cupcakes. Serve immediately or store as directed.

Notes

Freeze the Nutella solid for at least 30 minutes to ensure a gooey core. Use room-temperature ingredients for best texture. For gluten-free, substitute all-purpose flour with a 1:1 gluten-free blend. For dairy-free, use vegan butter and dairy-free milk.
