  • 2 tablespoons powdered sugar
  • 1 cup (240 ml) whipped cream (heavy cream or coconut cream for dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, whisk the melted butter and granulated sugar together until combined and glossy, about 1-2 minutes. Add eggs one at a time, whisking well after each addition. Stir in vanilla and almond extracts.
  3. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula until just combined. Avoid overmixing.
  5. Gently fold in the pitted and halved cherries, keeping them intact to preserve texture.
  6. Pour the batter into the prepared pan and spread evenly with a spatula.
