  • 2 cups boiled and mashed potatoes
  • 1/2 cup boiled green peas
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon amchur (dry mango powder)
  • Salt to taste
  • 2 tablespoons chopped fresh cilantro
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • Water as needed
  • Oil for frying

Instructions

  1. In a pan, heat a little oil and add cumin seeds until they splutter.
  2. Add chopped onions, green chilies, and grated ginger; sauté until onions are translucent.
  3. Add boiled peas and mashed potatoes to the pan.
  4. Mix in garam masala, turmeric, red chili powder, amchur, and salt.
  5. Cook the mixture for 5 minutes, stirring occasionally.
  6. Remove from heat and stir in chopped cilantro. Let the filling cool.
  7. In a bowl, mix all-purpose flour and salt. Add water gradually to make a firm dough.
  8. Divide the dough into equal portions and roll each into a small circle.
  9. Place a spoonful of filling in the center of each circle, fold and seal the edges to form patties.
  10. Heat oil in a frying pan over medium heat.
  11. Fry the patties until golden brown and crispy on both sides.
  12. Drain on paper towels and serve hot.

Notes

Ensure the dough is firm but pliable to avoid breaking while frying. Adjust spice levels to taste.
