These crispy Parmesan bread bites are a quick and easy homemade snack featuring crunchy bread cubes coated in a garlicky Parmesan crust. Perfect for snacking, parties, or pairing with meals.

Ingredients

Scale
  • 4 cups day-old baguette or ciabatta bread, cut into 1-inch cubes
  • 1 cup finely grated Parmesan cheese
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut about 4 cups of day-old baguette or ciabatta into 1-inch cubes.
  3. In a medium bowl, combine olive oil, grated Parmesan, minced garlic (or garlic powder), dried Italian herbs, salt, and black pepper. Stir until a thick, fragrant coating forms.
  4. Add the bread cubes to the bowl and toss gently until every piece is evenly coated with the Parmesan and oil mixture.
  5. Arrange the coated bread bites in a single layer on the prepared baking sheet without overcrowding.
  6. Bake for about 15 minutes, flipping the bites halfway through (around 7-8 minutes) for even browning. Aim for a deep golden color and firm crunch.
  7. Remove from oven and let cool on the baking sheet for 5 minutes to firm up and become crisp.

Notes

Use day-old bread for best crispiness. Toss bites halfway through baking for even browning. Avoid overcrowding the pan to prevent steaming. Freshly grated Parmesan improves flavor and texture. Store leftovers in an airtight container at room temperature for up to 2 days and re-crisp in a 350°F oven for 5 minutes before serving.
