  • 1 cup all-purpose flour (120g)
  • 1/4 cup cornstarch (30g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, adjust to taste
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup buttermilk or milk (180ml) (use dairy-free milk with 1 tbsp lemon juice for vegan option)
  • Vegetable oil or avocado oil, for brushing or spraying
  • Optional for dipping: Ranch dressing or creamy cilantro dip

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Slice the jalapenos into thin fries about 3 to 4 inches long and 1/4 inch thick. Remove seeds and membranes if you want less heat.
  3. In a large bowl, whisk together flour, cornstarch, baking powder, garlic powder, smoked paprika, salt, and black pepper.
  4. Pour the buttermilk (or milk alternative) into the dry ingredients and stir gently until just combined. The batter should be thick but pourable.
  5. Dip each jalapeno strip into the batter, letting excess drip off, and place in a single layer on the prepared baking sheet. Avoid overcrowding.
  6. Lightly brush or spray the battered fries with oil to help them crisp up.
  7. Bake for 15 minutes, then carefully flip each fry using tongs or a fork, brush again with oil, and bake for another 10-12 minutes until golden and crispy.
  8. Remove from oven and transfer fries to a cooling rack if available to keep them crispy.
  9. Serve immediately with your favorite dip such as ranch or creamy cilantro.

Notes

For less heat, remove jalapeno seeds and membranes before slicing. Keep batter consistency like pancake batter for best coating. Flip fries halfway through baking for even crispness. Rest fries on a cooling rack after baking to prevent sogginess. Can be made gluten-free by substituting flour with gluten-free blend or almond flour. Use dairy-free milk with lemon juice for vegan option. Air fryer adaptation: cook at 400°F (200°C) for 10-12 minutes, shaking halfway.
