  • 46 slices thick-cut bacon, chopped
  • 3/4 cup (75 grams) shredded sharp cheddar cheese
  • 1 tablespoon (15 ml) olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • Handful of fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the ends and halve each Brussels sprout; quarter larger sprouts for even cooking.
  3. Cook the chopped bacon in a cold skillet over medium heat until crispy, about 6-8 minutes. Remove bacon with a slotted spoon and reserve the bacon fat.
  4. In a mixing bowl, toss the Brussels sprouts with 1 tablespoon of reserved bacon fat, olive oil, minced garlic, salt, and pepper until evenly coated.
  5. Arrange the sprouts cut-side down on a rimmed baking sheet in a single layer.
  6. Roast for 20 minutes, flipping halfway through to ensure even caramelization.
  7. Sprinkle the cooked bacon and shredded cheese over the sprouts and return to the oven for 5 minutes or until the cheese is melted and bubbly.
  8. Garnish with fresh chopped parsley and a pinch of red pepper flakes if desired. Serve warm.

Pat Brussels sprouts dry before roasting to ensure crispiness. Use bacon fat to toss sprouts for extra flavor and crunch. Add cheese only near the end to prevent burning.
