  • ยฝ teaspoon ground allspice (pimento)
  • 1 tablespoon Jamaican-style curry powder
  • Salt to taste
  • ยฝ teaspoon freshly ground black pepper
  • ยผ cup breadcrumbs (30 g)
  • ยผ cup beef broth or water (60 ml)
  • 1 tablespoon oil (vegetable or canola) for sautรฉing
  • 1 egg (for egg wash, optional)
  • Splash of water (for egg wash)

Instructions

  1. In a large bowl, whisk together flour, turmeric, and salt.
  2. Add cold butter cubes and shortening if using; rub into flour until mixture resembles coarse crumbs with pea-sized butter bits.
  3. Gradually add ice-cold water starting with ยฝ cup, mixing gently until dough just comes together; form into a ball, flatten into a disk, wrap in plastic, and chill for at least 30 minutes.
  4. Heat oil in a skillet over medium heat; sautรฉ onions, garlic, and Scotch bonnet pepper for about 3 minutes until softened.
  5. Add ground beef, cook until browned (8-10 minutes), breaking apart with a spoon.
  6. Stir in thyme, allspice, curry powder, salt, and black pepper.
  7. Add beef broth or water and breadcrumbs; simmer on low for 5 minutes until filling is moist but not wet; remove from heat and cool to room temperature.
  8. Preheat oven to 375ยฐF (190ยฐC). Roll dough on floured surface to 1/8-inch thickness.
  9. Cut dough into 5-inch diameter circles using a cutter or bowl.
  10. Place about 2 tablespoons of cooled filling in center of each circle; brush edges with water, fold over to form half-moon, and seal edges with fork or crimper.
  11. Poke small holes on top of each patty to allow steam to escape.
  12. Optional: Beat egg with splash of water and brush over patties for a glossy finish.
  13. Place patties on parchment-lined baking sheet, spacing 2 inches apart.
  14. Bake for 25-30 minutes until golden brown and crispy.
  15. Cool slightly on wire rack before serving.

Notes

Keep butter and shortening very cold for flaky crust. Chill dough before rolling. Do not overfill patties to avoid leaking. Poke holes on top to prevent bursting. Baking on a pizza stone can help crisp the bottom crust. Rest filling before assembly to avoid melting butter prematurely.
