  • ¾ teaspoon salt (fine sea salt preferred)
  • ¼ teaspoon freshly ground black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Rinse 12 ounces (340 g) of fresh okra under cold water. Pat dry thoroughly with paper towels to remove any moisture. Trim the stem ends and slice into ½-inch thick pieces. (About 5 minutes)
  2. Place the sliced okra in a large mixing bowl. Drizzle 1 tablespoon olive or avocado oil evenly over the pieces. Add 2 tablespoons cornstarch, ½ teaspoon garlic powder, ½ teaspoon paprika, ¾ teaspoon salt, ¼ teaspoon black pepper, and a pinch of cayenne if using. Toss gently but thoroughly to coat each piece.
  3. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  4. Spread the okra in a single layer inside the air fryer basket. Avoid overcrowding; cook in batches if necessary. (About 2 minutes)
  5. Air fry at 400°F (200°C) for 10-12 minutes. Shake the basket or toss the okra halfway through cooking (around 6 minutes) to ensure even browning. Look for a deep golden color and crunchy texture.
  6. Transfer the crispy okra to a plate lined with paper towels to absorb excess oil. Let rest for 1-2 minutes before serving.

Notes

Pat okra completely dry before seasoning to avoid sogginess. Toss okra halfway through cooking for even crispiness. For extra crispiness, sprinkle a little more cornstarch before cooking but avoid overdoing it to prevent powdery coating. If no air fryer is available, bake at 425°F (220°C) for 15-20 minutes, turning halfway, though it won’t be as crispy. Store leftovers at room temperature up to 1 day; reheat in air fryer at 350°F (175°C) for 2-3 minutes to restore crunch. Avoid microwaving.
