  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup milk or plant-based milk
  • 1/4 teaspoon garlic powder
  • Freshly ground black pepper, a pinch
  • 4 hoagie rolls or sub sandwich buns, lightly toasted
  • Optional: sliced banana peppers or pickled jalapeรฑos
  • Fresh parsley or chives for garnish

Instructions

  1. Heat 2 tablespoons of olive oil or butter in a skillet over medium-high heat. Add sliced onions and cook for about 5 minutes until softened and golden.
  2. Add sliced mushrooms, season with salt, pepper, and smoked paprika if using. Cook for 8โ€“10 minutes, stirring occasionally, until mushrooms release moisture and brown slightly.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. In a mixing bowl, combine softened cream cheese, shredded mozzarella, milk, garlic powder, and a pinch of black pepper. Stir until smooth and creamy. Add more milk if needed to loosen the sauce.
  5. Lower heat to medium-low and pour cheese sauce into the skillet with mushrooms and onions. Stir gently and cook for 2โ€“3 minutes until sauce thickens and coats the mixture.
  6. Slice and lightly toast the hoagie rolls in the oven or toaster until golden and crisp.
  7. Spoon the creamy mushroom mixture into each toasted bun. Add optional banana peppers or jalapeรฑos and garnish with fresh parsley or chives.
  8. Serve immediately while warm and creamy.
