  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened and cubed
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 12 oz fettuccine or penne pasta
  • ½ cup reserved pasta water
  • Fresh parsley, chopped (for garnish)
  • Extra Cajun seasoning (for serving)

Instructions

  1. Pat the chicken breasts dry with paper towels. In a small bowl, mix together the Cajun seasoning, smoked paprika, garlic powder, onion powder, and cayenne (if using). Sprinkle this mixture evenly over both sides of the chicken, pressing it in gently so it sticks.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts. Sear for 3-4 minutes per side, until you get a deep golden-brown crust. Don’t worry if the chicken isn’t cooked through—it will finish in the slow cooker.
  3. Transfer the seared chicken to your slow cooker. Pour the chicken broth around the chicken (not directly over it, so you don’t wash off the seasoning). Add the minced garlic, cubed cream cheese, and heavy cream. Give everything a gentle stir, making sure the cream cheese is mostly submerged so it melts evenly.
  4. Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours. The chicken is ready when it shreds easily with two forks. About 30 minutes before serving, carefully remove the chicken breasts to a cutting board and shred them using two forks. Return the shredded chicken to the slow cooker.
  5. Stir in the freshly grated Parmesan cheese until it’s fully melted and the sauce is smooth. Taste and adjust seasoning—you might want a pinch more Cajun seasoning or a crack of black pepper. If the sauce seems too thick, stir in a splash of reserved pasta water (or chicken broth) until it reaches your desired consistency.
  6. About 10 minutes before serving, bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve about ½ cup of pasta water before draining. Add the drained pasta directly to the slow cooker with the sauce and shredded chicken. Toss everything together until the pasta is well coated. If the sauce thickens too much as it sits, add a little reserved pasta water to loosen it up.
  7. Ladle the creamy Cajun chicken Alfredo into bowls. Top with fresh chopped parsley and an extra sprinkle of Cajun seasoning if you like heat. Serve immediately while it’s warm and luscious.

Notes

Don’t skip searing the chicken for best flavor. Use full-fat cream cheese and heavy cream to prevent curdling. Add Parmesan at the end to avoid clumping. Cook pasta al dente to prevent mushiness.
