A quick and easy one-pot creamy sausage potato soup that comes together in just 30 minutes. Perfect for busy weeknights, this hearty comfort food features savory sausage, tender potatoes, and a rich, velvety broth.

Ingredients

Scale
  • 1 pound ground sausage (mild Italian or breakfast sausage)
  • 4 medium Yukon Gold potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the sausage: Place your Dutch oven over medium-high heat. Add the ground sausage and cook, breaking it up with your wooden spoon, until browned and cooked through—about 6-8 minutes. Use a slotted spoon to transfer the sausage to a plate and set aside. Leave about 1 tablespoon of drippings in the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add the butter to the pot and let it melt. Add the chopped onion and cook for 3-4 minutes until translucent and soft. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the flour: Sprinkle the flour over the onions and garlic. Stir constantly for about 1 minute to cook out the raw flour taste.
  4. Pour in the broth: Slowly pour in the chicken broth while stirring constantly. Bring the mixture to a gentle boil.
  5. Add the potatoes: Stir in the diced potatoes, dried thyme, and smoked paprika. Return the sausage to the pot. Season with a pinch of salt and pepper.
  6. Simmer: Reduce heat to medium-low and let the soup simmer gently for 15-18 minutes, stirring occasionally, until potatoes are fork-tender.
  7. Add the cream: Reduce heat to low. Slowly pour in the heavy cream while stirring gently. Let the soup heat through for another 2-3 minutes. Do not let it boil.
  8. Taste and adjust: Add more salt and pepper if needed. For a thicker soup, mash a few potato cubes against the side of the pot. If too thick, add a splash of broth or milk.
  9. Serve: Ladle into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread or a simple side salad.

Notes

Let the soup rest for about 5 minutes after cooking for flavors to meld. The soup tastes even better the next day. For a thicker soup, mash some potatoes against the pot before adding cream. Avoid boiling after adding cream to prevent curdling.
