These creamy queso chicken tacos are a quick and easy weeknight dinner that comes together in about 30 minutes. Tender shredded chicken is coated in a velvety, spicy queso sauce and served in warm tortillas with fresh toppings.

Ingredients

Scale
  • 1 ½ pounds boneless, skinless chicken thighs (or breasts)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk (or half-and-half)
  • ½ cup heavy cream
  • 8 ounces Velveeta cheese, cubed
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • 8–10 small flour or corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Chopped cilantro
  • Sour cream (optional)
  • Lime wedges

Instructions

  1. Season the chicken. In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Pat the chicken thighs dry with paper towels, then rub the spice mixture all over them. Let them sit while you heat the pan.
  2. Sear the chicken. Heat the olive oil in your large skillet over medium-high heat. Once it’s shimmering (but not smoking), add the chicken thighs in a single layer. Sear for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Transfer the chicken to a cutting board and let it rest for 5 minutes.
  3. Shred the chicken. Using two forks, shred the chicken into bite-sized pieces. Set aside.
  4. Start the queso sauce. In the same skillet, melt the butter over medium heat. Once bubbling, whisk in the flour and cook for 1 minute, stirring constantly.
  5. Add the dairy. Slowly pour in the milk and heavy cream while whisking continuously. Keep whisking until the mixture is smooth and starts to thicken slightly, about 2-3 minutes.
  6. Melt the cheese. Reduce the heat to low and add the cubed Velveeta. Stir gently until completely melted and the sauce is smooth, about 2-3 minutes.
  7. Add the Rotel and spices. Stir in the drained Rotel, smoked paprika, and cayenne (if using). Let the sauce simmer for 2-3 minutes, stirring occasionally, until thickened.
  8. Combine chicken and sauce. Add the shredded chicken back to the skillet and stir to coat. Let everything heat through for 2-3 minutes. Taste and adjust seasoning.
  9. Warm the tortillas. In a dry skillet over medium heat, warm tortillas for about 30 seconds per side, or wrap in foil and warm in a 350°F oven for 5-7 minutes.
  10. Assemble and serve. Spoon the creamy queso chicken into the warm tortillas. Top with shredded lettuce, diced tomatoes, cilantro, a dollop of sour cream, and a squeeze of fresh lime juice. Serve immediately.

Notes

Don’t skip the roux—it gives the queso sauce body. Keep heat low when melting cheese to avoid graininess. Let chicken rest before shredding to keep it juicy. Toast tortillas for better flavor and structure. Taste as you go to adjust seasoning.
