  • ½ cup (120g) Greek yogurt or plain yogurt
  • 3 to 4 tablespoons (60-80ml) maple syrup
  • 1 teaspoon vanilla extract
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • A pinch of salt
  • 4 ounces (113g) cream cheese, softened to room temperature
  • 2 tablespoons (15g) powdered sugar
  • ½ teaspoon vanilla extract (for the cheesecake swirl)
  • 1 to 2 teaspoons milk (for the cheesecake swirl)

Instructions

  1. Make the cream cheese swirl first. In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mash and stir with a fork or small whisk until completely smooth. Add 1 to 2 teaspoons of milk, one at a time, until the mixture is thin enough to drizzle but still thick enough to hold its shape. Set aside.
  2. Mix the pumpkin oat base. In a medium bowl, combine the rolled oats, pumpkin puree, milk, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and a pinch of salt. Stir everything together until well combined. The mixture will look a bit loose at this point, but the oats will absorb the liquid overnight.
  3. Layer the oats and cream cheese swirl into jars. Divide the pumpkin oat mixture evenly among four jars (about ¾ cup per jar). Drop small spoonfuls of the cream cheese mixture on top of the oats in each jar (about 1 to 2 tablespoons per jar). Take a knife or skewer and gently swirl it through the cream cheese and oats to create a marbled effect. Do not overmix.
  4. Refrigerate for at least 4 hours, but overnight is best. Put the lids on the jars and place them in the refrigerator. The oats need time to soften and absorb the liquid.
  5. Serve cold or at room temperature. In the morning, take a jar out of the fridge. Give it a good stir if desired, or leave it layered for a prettier presentation. Add your favorite toppings, such as chopped pecans, a drizzle of maple syrup, or a sprinkle of graham cracker crumbs.
