This creamy Philly cheesesteak soup is a quick, no-fuss dinner that tastes like you spent hours on it. All the flavor of a classic Philly cheesesteak, turned into the coziest bowl of soup you’ll ever make.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 pound deli roast beef, thinly sliced
  • 2 cups shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • Optional: ¼ cup grated Parmesan cheese
  • Hoagie rolls or crusty bread for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. Sauté the Vegetables: Place a large pot or Dutch oven over medium heat and add olive oil. Once the oil shimmers, add diced onion, green bell pepper, and red bell pepper. Cook for about 4 minutes until onions are translucent and peppers are tender. Add minced garlic and stir for 30 seconds until fragrant.
  2. Build the Broth: Pour in beef broth, heavy cream, Worcestershire sauce, and dried thyme. Stir well, scraping up any browned bits from the bottom. Bring to a gentle simmer (do not boil hard).
  3. Add the Beef: Roughly chop the thinly sliced deli roast beef into bite-sized chunks. Add to the pot and simmer for 5 minutes.
  4. Melt in the Cheese: Reduce heat to low. Add shredded provolone and mozzarella (and Parmesan if using) a handful at a time, stirring continuously in a figure-eight motion until fully melted and smooth, about 2-3 minutes. Season with salt and pepper to taste.
  5. Simmer and Serve: Let soup simmer on low for 2 more minutes. Ladle into bowls, garnish with fresh parsley, and serve immediately with toasted hoagie rolls or crusty bread.

Notes

For best results, shred cheese from a block (not pre-shredded) to avoid anti-caking agents. Add cheese gradually over low heat, stirring constantly. If soup is too thick, add a splash of warm broth or milk. If too thin, simmer uncovered to reduce. Use low-sodium broth to control saltiness. Not recommended for freezing due to dairy content.
