  • 12 oz Italian sausage (about 3 links, mild or sweet), casings removed
  • 16 oz potato gnocchi (one standard package, shelf-stable)
  • 4 cloves garlic, minced
  • 1 cup chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 3 cups fresh spinach, packed
  • ½ cup Parmesan cheese, freshly grated
  • Salt and black pepper to taste
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Brown the sausage: Heat a large deep skillet or Dutch oven over medium-high heat. Add the sausage (removed from casings) and break it up with a spoon. Cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Spoon out excess fat, leaving about 1 tablespoon in the pan.
  2. Sauté the garlic: Reduce heat to medium. Add minced garlic and stir for about 30 seconds until fragrant.
  3. Add broth and gnocchi: Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Add gnocchi straight from the package (no boiling needed). Stir to combine, ensuring gnocchi are mostly submerged. Bring to a gentle simmer.
  4. Cook the gnocchi: Let gnocchi simmer in the broth for 3-4 minutes, stirring occasionally, until tender but still holding their shape. The broth will reduce slightly.
  5. Add cream and spinach: Pour in heavy cream and stir. Add fresh spinach in handfuls, stirring as it wilts (about 1 minute).
  6. Finish with Parmesan: Remove skillet from heat. Stir in grated Parmesan until melted into the sauce. Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired.
  7. Rest and serve: Let the gnocchi sit in the skillet for 2-3 minutes before serving. Serve hot with extra Parmesan on top.

Notes

Don’t overcook the gnocchi; they only need 3-4 minutes in the simmering broth. Use freshly grated Parmesan for a smooth sauce. Brown the sausage well for maximum flavor. The sauce will thicken as it cools, so err on the side of slightly thinner. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat with a splash of broth or cream.
