A refreshing no-bake dessert featuring layers of Maria cookies and a tangy lime filling made with sweetened condensed milk and cream cheese. Perfect for hot days when you want a cool, creamy treat with minimal effort.

Ingredients

Scale
  • 2 cans (14 ounces each) sweetened condensed milk
  • 8 ounces cream cheese, softened
  • 1/2 cup fresh lime juice (about 4–5 medium limes)
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • 1 package (about 7 ounces) Maria cookies
  • Pinch of salt
  • Optional: Whipped cream and lime slices for garnish

Instructions

  1. Prepare the lime filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides. Add both cans of sweetened condensed milk and beat until fully combined.
  2. Add the lime juice and zest: With the mixer on low speed, slowly pour in the fresh lime juice. The mixture will thicken immediately. Add lime zest, vanilla extract, and a pinch of salt. Beat on medium speed for another minute until smooth.
  3. Prepare the dipping station: Pour about 1/2 cup of the lime filling into a shallow dish for dipping cookies. Keep the remaining filling in the bowl.
  4. Start layering: Spread a thin layer of filling (about 1/4 cup) on the bottom of a 9×13-inch baking dish.
  5. Dip and arrange the first cookie layer: Quickly dip each Maria cookie into the shallow dish of filling, coating both sides lightly. Arrange in a single layer in the baking dish, breaking cookies to fill gaps as needed.
  6. Spread the filling: Spoon about 1/3 of the remaining filling over the first cookie layer and spread evenly.
  7. Repeat the layers: Dip another layer of cookies and arrange on top. Spread another 1/3 of the filling. Repeat one more time, ending with a final layer of filling on top.
  8. Cover and chill: Cover tightly with plastic wrap or foil. Refrigerate for at least 6 hours, but overnight is best.
  9. Garnish and serve: Before serving, spread whipped cream on top if desired. Garnish with lime slices and extra zest. Slice into squares and serve cold.

Notes

Don’t over-dip the cookies; a quick dip on each side is enough. Use room temperature cream cheese for a smooth filling. Let the cake chill fully (at least 6 hours, ideally overnight) for the best texture. For a key lime version, use 10-12 key limes. For a dairy-free version, use dairy-free cream cheese and replace sweetened condensed milk with full-fat coconut milk blended with 1/4 cup honey or maple syrup.
