Instructions

  1. Heat-treat the flour: Spread 1 cup all-purpose flour on a baking sheet and bake at 350°F for 5 minutes. Let cool completely.
  2. Make the matcha cookie dough: In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes). Add vanilla extract and beat again. In a separate bowl, whisk together cooled flour, matcha powder, and salt. Gradually add dry ingredients to wet mixture, mixing on low until just combined.
  3. Press and chill the dough: Line an 8×8-inch pan with parchment paper. Press dough evenly into the pan. Refrigerate for at least 30 minutes until firm.
  4. Make the cream cheese filling: In a medium bowl, beat cream cheese, powdered sugar, and heavy cream until smooth and fluffy. Transfer to a piping bag or zip-top bag.
  5. Assemble the cups: Lift chilled dough out of pan using parchment. Cut into 16 equal squares. Press a small well into the center of each square. Pipe cream cheese filling into each well.
  6. Add white chocolate drizzle: Melt white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth. Drizzle over filled cups. Optionally sprinkle with flaky sea salt. Refrigerate for 15 minutes to set chocolate.
