A quick and easy layered coffee dessert combining creamy matcha whipped cream with hot espresso and vanilla ice cream or ice cubes for a refreshing treat.

  • 1 teaspoon (2g) ceremonial-grade matcha powder
  • 2 tablespoons (25g) granulated sugar
  • 1/2 teaspoon (2.5ml) vanilla extract (optional)
  • 1 cup (240ml) cold heavy cream (or full-fat coconut cream for dairy-free)
  • 1.5 ounces (45ml) freshly brewed hot espresso (or strong brewed coffee concentrate)
  • 12 scoops vanilla ice cream or a few ice cubes

Instructions

  1. Sift matcha powder into a chilled bowl to avoid lumps. Add granulated sugar and vanilla extract if using. Pour in cold heavy cream.
  2. Whisk the mixture using a bamboo whisk, electric mixer, or hand whisk until soft peaks form. Avoid overwhipping to prevent graininess.
  3. Brew a fresh shot of espresso, about 1.5 ounces (45ml), piping hot. If no espresso machine, use strong brewed coffee concentrate.
  4. Place 1-2 scoops of vanilla ice cream or a few ice cubes in a clear serving glass.
  5. Spoon a generous dollop of the creamy matcha mixture over the ice cream or ice cubes to create a distinct green layer.
  6. Slowly pour the hot espresso over the cream layer to maintain the layered effect.
  7. Serve immediately with a spoon and straw for the best experience.

Use ceremonial-grade matcha for best flavor and vibrant color. Keep cream and tools chilled for fluffiest texture. Pour espresso slowly to maintain layers. Matcha cream can be made ahead and chilled. For dairy-free, substitute heavy cream with coconut cream and use plant-based ice cream. Adjust sugar to taste or substitute with honey or maple syrup.
