  • 6 cups (150 grams) Rice Krispies cereal
  • 1 small box (about 3.4 ounces) instant banana pudding mix
  • 1 cup (240 ml) milk (whole or 2%)
  • 2 medium ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the banana pudding: In a small bowl, whisk together the banana pudding mix and 1 cup (240 ml) of milk until smooth. Chill in the fridge for at least 5 minutes.
  2. Peel and mash 2 ripe bananas in a bowl until smooth with a few small chunks remaining.
  3. In a medium saucepan over low heat, melt 1/4 cup (56 grams) unsalted butter. Add 4 cups (240 grams) mini marshmallows and stir constantly until melted and smooth, about 4-5 minutes.
  4. Remove saucepan from heat. Gently fold in the prepared banana pudding, mashed bananas, 1 teaspoon vanilla extract, and a pinch of salt. Stir carefully to keep mixture light and fluffy.
  5. Pour 6 cups (150 grams) Rice Krispies cereal into a large mixing bowl. Immediately pour the marshmallow-banana mixture over the cereal and fold until all cereal is evenly coated.
  6. Lightly grease or line a 9×13-inch baking pan with parchment paper. Transfer the mixture into the pan and press down firmly but gently to create an even layer.
  7. Allow the treats to cool and set at room temperature for at least 30 minutes, or chill in the fridge for 15-20 minutes for faster setting.
  8. Once set, cut into squares or rectangles and serve.

Notes

Use ripe bananas with brown spots for best sweetness and flavor. Melt marshmallows over low heat to avoid burning. Fold pudding and bananas gently to keep treats light and fluffy. Press treats gently to maintain crispy texture. Store in airtight container at room temperature for up to 2 days or freeze for up to 1 month.
