  • 1/4 teaspoon cayenne pepper (optional)
  • 8 oz lump crab meat
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. Cook the pasta. Bring a large pot of generously salted water to a rolling boil. Add your linguine or fettuccine and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Drain the pasta and set it aside.
  2. Start the sauce base. While the pasta cooks, melt the butter in a large skillet over medium heat. Once it’s foaming, add the minced garlic and sauté for about 30 seconds until fragrant. Don’t let it brown.
  3. Bloom the spices. Sprinkle the Cajun seasoning, smoked paprika, and cayenne (if using) over the butter and garlic. Stir constantly for about 30 seconds.
  4. Build the creamy sauce. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then reduce the heat to low. Let it cook for 2-3 minutes, stirring occasionally, until it thickens slightly. It should coat the back of a spoon. If it looks too thick, add a splash of reserved pasta water.
  5. Add the Parmesan. Gradually sprinkle in the grated Parmesan cheese, stirring constantly until it’s fully melted and incorporated. Taste it here and adjust salt and pepper.
  6. Fold in the crab meat. Gently add the lump crab meat to the sauce. Use a light hand here—you want to keep those beautiful chunks intact. Stir just until the crab is warmed through, about 1-2 minutes.
  7. Combine pasta and sauce. Add the drained pasta to the skillet with the sauce. Use tongs to toss everything together until every strand is coated. If the sauce seems too thick, add a little reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
  8. Finish with lemon and parsley. Squeeze the juice of half a lemon over the pasta and toss once more. Sprinkle with fresh chopped parsley. Serve immediately.

Don’t overcook the crab—it’s already cooked and only needs to be warmed through. Reserve pasta water to adjust sauce consistency. Bloom spices in butter for maximum flavor.
