  • 1/2 cup creamy peanut butter
  • 2 tablespoons powdered sugar
  • 1 tablespoon softened butter
  • 1/2 cup semisweet chocolate chips
  • Optional: 1/4 cup chopped peanuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan with butter or nonstick spray, then line it with a strip of parchment paper hanging over the long sides.
  2. In your large mixing bowl, mash the three ripe bananas with a fork until smooth with some small lumps.
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Whisk together until well combined and smooth.
  4. Sprinkle the baking soda and salt over the wet mixture, then add the flour. Fold together with a rubber spatula until just combined. Do not overmix.
  5. Gently fold in 1/2 cup of chocolate chips. Reserve a handful to sprinkle on top later.
  6. In a separate medium bowl, combine the creamy peanut butter, powdered sugar, and softened butter. Stir until smooth and spreadable.
  7. Pour half the banana bread batter into your prepared pan and spread it even. Drop spoonfuls of half the peanut butter mixture over the batter, then use a knife to gently swirl it in. Pour the remaining batter on top, then drop the rest of the peanut butter mixture in spoonfuls. Use that knife again to create figure-eight swirls through the top layer.
  8. Sprinkle the reserved chocolate chips (and chopped peanuts if using) over the top. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. If the top is browning too fast (around 40 minutes), tent loosely with foil.
  9. Let the bread cool in the pan for 10 minutes, then use the parchment paper to lift it out onto a cooling rack. Cool completely before slicing—about 1 hour.
