  • 2 tablespoons granulated sugar
  • 24 oz (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) sour cream
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons all-purpose flour
  • ¼ cup (40g) rainbow jimmies

Instructions

  1. Preheat your oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar in a bowl until the crumbs are evenly coated and look like wet sand. Press this mixture firmly into the bottom of the springform pan, creating an even layer. Use the bottom of a glass to compress it well. Bake for 10 minutes, then set aside to cool.
  2. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Add sugar and mix again until fully incorporated.
  3. Lower the mixer speed and blend in the sour cream and vanilla extract until smooth. Don’t overbeat here; just combine.
  4. Crack one egg in, mix on low speed until just combined, then add the next egg one at a time to prevent overmixing.
  5. Sift the flour over the batter and fold it in gently using a rubber spatula. The batter should be thick but pourable.
  6. Reserve a tablespoon of rainbow jimmies for topping. Fold the rest carefully into the batter to avoid color bleed.
  7. Pour the filling over the cooled crust and smooth the top with a spatula. Sprinkle the reserved rainbow jimmies evenly on top.
  8. Bake at 325°F (160°C) for 50-60 minutes. The edges should be set, but the center will still have a slight wobble. Avoid opening the oven door too early.
  9. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually.
  10. Remove from the oven, run a knife around the edge to loosen, and chill in the refrigerator for at least 4 hours or overnight before serving.
