A quick and easy creamy avocado pasta sauce that is smooth, rich, and full of fresh, bright flavors. Perfect for weeknight meals and adaptable for vegan and gluten-free diets.

  • 2 medium ripe avocados, peeled and pitted
  • 2 tablespoons fresh lemon juice
  • 2 small garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • A handful of fresh basil leaves, roughly chopped (optional)
  • ½ teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
  • A pinch of red pepper flakes (optional)
  • ¼ cup grated Parmesan cheese (optional, or substitute with nutritional yeast for vegan)
  • 12 ounces pasta of choice (linguine, spaghetti, or penne)

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces of pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve ½ cup of pasta water before draining.
  2. While the pasta cooks, place the avocados, lemon juice, and minced garlic into a food processor. Pulse until combined.
  3. With the processor running, slowly drizzle in the olive oil until the sauce is smooth and creamy. Add basil leaves and pulse a few times to incorporate.
  4. Add salt, black pepper, and red pepper flakes if using. Blend briefly to mix all flavors.
  5. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired creaminess is reached.
  6. Return drained pasta to the pot or a large bowl. Pour the avocado sauce over the pasta and toss gently to coat.
  7. Optionally, sprinkle grated Parmesan cheese or vegan alternative over the pasta and toss again.
  8. Serve immediately, garnished with fresh basil leaves and a drizzle of olive oil if desired.

Notes

Use ripe but firm avocados for best texture. Pulse the sauce to avoid overheating and browning. Use fresh lemon juice to keep the sauce bright and green. Reserve pasta water to adjust sauce consistency. Serve immediately for best flavor and color. For vegan versions, omit Parmesan or use nutritional yeast. Store sauce separately from pasta and add lemon juice before reheating to prevent browning.
