Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and halve 4 large ripe peaches, removing the pits. Cut larger peaches into quarters for even baking.
  3. In a medium bowl, combine 1/4 cup granulated sugar, 2 tablespoons packed brown sugar, and 2 teaspoons ground cinnamon. Stir to blend evenly.
  4. Lightly brush each peach half with 3 tablespoons melted unsalted butter.
  5. Gently roll the buttered peach halves in the cinnamon sugar mixture, coating all sides.
  6. Place the coated peach halves cut-side up in an 8×8-inch baking dish.
  7. Drizzle 1 tablespoon fresh lemon juice and 1 teaspoon vanilla extract evenly over the peaches.
  8. Bake for 20-25 minutes until peaches are tender but hold their shape and sugar is bubbling and slightly crisp.
  9. Check doneness by inserting a fork or skewer; it should slide in with slight resistance but not mushy.
  10. Let peaches rest for 5 minutes before serving to allow syrup to thicken.
