  • 1 cup brown or green lentils, rinsed
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (fire-roasted recommended)
  • 6 cups low-sodium chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • ½ teaspoon red pepper flakes (optional, for extra heat)
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice (optional)
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Sausage: Heat a large Dutch oven over medium-high heat. Add the spicy Italian sausage (casings removed if using links). Break it up with a wooden spoon and cook for 5-7 minutes until fully browned. Use a slotted spoon to transfer the sausage to a plate, leaving the rendered fat in the pot.
  2. Sauté the Vegetables: Reduce heat to medium. Add the diced onion, carrots, and celery to the pot with the sausage fat. Sauté for about 5 minutes, stirring occasionally, until the onions are translucent and the vegetables start to soften.
  3. Add Garlic and Spices: Stir in the minced garlic, dried thyme, dried oregano, and red pepper flakes (if using). Cook for about 30 seconds until fragrant.
  4. Deglaze the Pot: Pour in about ½ cup of the broth and scrape up all the browned bits from the bottom of the pot. Let it bubble for about 30 seconds.
  5. Add Tomatoes, Lentils, and Broth: Stir in the diced tomatoes (with their juices), rinsed lentils, and remaining broth. Add the bay leaves. Stir to combine.
  6. Return the Sausage: Add the browned sausage back into the pot. Stir to distribute evenly.
  7. Simmer: Bring the soup to a boil, then reduce heat to low. Cover and let it simmer gently for 25-30 minutes, or until the lentils are tender but still hold their shape. Stir occasionally to prevent sticking.
  8. Season and Finish: Remove the bay leaves. Taste and add salt and black pepper as needed. Stir in the fresh lemon juice if using.
  9. Serve: Ladle the soup into bowls and garnish with fresh chopped parsley. Serve hot with crusty bread or a simple side salad.

Notes

Don’t rush the browning step—those browned bits (fond) are key for flavor. Season in layers, adding salt gradually. Use brown or green lentils; red lentils will turn mushy. The soup tastes even better the next day. For a vegetarian version, skip the sausage and use vegetable broth, sautéing vegetables in olive oil. To freeze, cool completely and store in airtight containers for up to 3 months.
