Ingredients

Scale
  • 2 tablespoons coconut oil or olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1–2 fresh red or green chilies, finely chopped
  • 4 cups fresh or frozen corn kernels
  • 1 can (13.5 ounces) full-fat coconut milk
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • Fresh cilantro, chopped (for garnish)
  • Toasted coconut flakes (for garnish)
  • Lime wedges (for garnish)
  • Crushed red pepper flakes (for garnish)

Instructions

  1. Prep your ingredients first. Dice the onion, mince the garlic, grate the ginger, and chop the chilies. If using fresh corn, cut the kernels off the cob.
  2. Heat the oil in your pot over medium heat. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until soft and translucent.
  3. Add the garlic, ginger, and chopped chilies. Stir constantly for about 1 minute until fragrant.
  4. Add the corn kernels. Stir everything together and cook for 2-3 minutes.
  5. Pour in the coconut milk and broth. Stir well to combine, scraping up any browned bits from the bottom of the pot.
  6. Season with salt, black pepper, and red pepper flakes if using. Bring the soup to a gentle simmer and cook for 10-12 minutes, stirring occasionally.
  7. Remove the pot from heat. Let it cool for about 5 minutes before blending.
  8. Blend the soup until smooth using an immersion blender or regular blender (in batches). For a chunkier texture, blend only half the soup.
  9. Taste and adjust seasoning. Add more salt, chili, or a squeeze of lime as desired.
  10. Ladle into bowls and garnish with fresh cilantro, toasted coconut flakes, a squeeze of lime, and crushed red pepper flakes if desired. Serve immediately.

Notes

For a chunkier soup, blend only half. Fresh ginger is key for flavor. Toast coconut flakes for garnish in a dry pan until golden. Soup tastes even better the next day. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
