  • Thick-sliced white or sourdough bread
  • 3/4 cup shredded mozzarella or sliced provolone cheese (about 85 g)
  • 1/2 cup cooked spaghetti noodles (about 120 ml)
  • 1 cup warmed spaghetti sauce (240 ml)
  • 1 tablespoon unsalted butter, softened (15 g) per bread slice
  • Optional: fresh basil leaves
  • Optional: sprinkle of Parmesan cheese

Instructions

  1. Cook the spaghetti noodles in salted boiling water until al dente, about 8-10 minutes. Drain well.
  2. Toss the drained spaghetti noodles gently with warmed spaghetti sauce to coat evenly. Set aside.
  3. Spread a thin layer of softened unsalted butter on one side of each bread slice (this will be the outside).
  4. On the unbuttered side of one bread slice, layer shredded mozzarella or sliced provolone cheese.
  5. Pile a generous amount of the sauced spaghetti over the cheese. Add fresh basil leaves or Parmesan if desired.
  6. Add another light layer of cheese on top of the spaghetti to help bind the filling.
  7. Place the second slice of bread on top, butter side facing out.
  8. Heat a non-stick skillet over medium-low heat. Place the sandwich in the pan and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  9. Remove from heat and let rest for a minute before cutting and serving.

Notes

Use thick-sliced bread to prevent sogginess. Cook over medium-low heat and press gently with a spatula for a crispy crust and melted cheese. Drain spaghetti well and use a modest amount of sauce to avoid soggy bread. Butter the outside of the bread for a golden crust. If bread browns too fast before cheese melts, lower heat and cover pan briefly.
