  • 1 pound (450 g) ground beef (85% lean)
  • 4 cups cauliflower rice (about 1 medium head or frozen equivalent)
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Chop the onion finely and mince the garlic. If using fresh cauliflower, pulse it in a food processor until it resembles rice-sized grains. If using frozen, thaw and drain any excess water. This takes about 5-7 minutes.
  2. Heat 2 tablespoons of olive or avocado oil in a large skillet over medium-high heat until shimmering but not smoking, about 1-2 minutes.
  3. Add the chopped onions and sauté for 3-4 minutes until translucent and slightly caramelized. Add the garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
  4. Add the ground beef in an even layer. Let it brown without stirring for about 2 minutes, then break it up with a spatula. Continue cooking and stirring until fully browned and no pink remains, about 6-8 minutes. Drain excess fat if needed.
  5. Sprinkle in smoked paprika, salt, and pepper. Stir in Worcestershire sauce and adjust seasoning to taste.
  6. Add the cauliflower rice and mix well. Cook for 5-7 minutes, stirring often so the cauliflower softens but retains a slight bite. Add a splash of oil or water if the pan feels dry.
  7. If desired, sprinkle red pepper flakes and stir in chopped fresh parsley just before removing from heat.
  8. Serve warm, optionally topped with a fried egg or a spoonful of sour cream.

Notes

Pat thawed frozen cauliflower rice dry to avoid sogginess. Do not rush browning the beef to develop flavor. Add garlic after onions are softened to prevent burning. If skillet is small, cook beef in batches for better browning. Optional toppings include fried egg, sour cream, or shredded cheese.
