This cozy pumpkin cobbler features a creamy, pudding-like pumpkin custard topped with a buttery, crisp crumble. It’s an easy fall dessert that delivers all the warm, spiced flavor of pumpkin pie without the fuss of rolling dough.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree
  • 1 cup heavy cream
  • 2 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup packed brown sugar (light or dark)
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish with butter or non-stick spray.
  2. Make the pumpkin filling: In a large mixing bowl, whisk together the pumpkin puree, heavy cream, eggs, granulated sugar, vanilla extract, pumpkin pie spice, and salt until completely smooth and uniform.
  3. Pour the filling into the prepared dish and spread evenly with a spatula.
  4. Make the crumble topping: In a medium bowl, combine the flour, brown sugar, cinnamon, and nutmeg. Whisk to break up clumps. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or fork until it resembles coarse sand with some pea-sized butter pieces. Fold in nuts if using.
  5. Sprinkle the crumble mixture evenly over the pumpkin filling. Do not press it down.
  6. Bake for 40-45 minutes, until the filling is set and the topping is golden brown. If the topping browns too quickly, tent loosely with aluminum foil after 30 minutes.
  7. Cool on a wire rack for at least 15 minutes before serving. The filling will set as it cools.
  8. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Do not overmix the crumble; leave some visible butter pieces for crispiness. Use room temperature eggs for smoother blending. Let the cobbler rest for at least 15 minutes before serving to allow the filling to set. The crumble topping can be prepared ahead and stored in the fridge for up to 3 days.
