  • 2 cups (200g) almond flour
  • 1 medium apple (Honeycrisp, Fuji, or Gala), peeled and finely diced (about 1 cup)
  • 1/4 cup (60ml) coconut oil, melted
  • 1/4 cup (60ml) pure maple syrup
  • 1 large egg
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chopped walnuts or pecans, 1/4 cup raisins or dried cranberries, or shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Peel and dice the apple into small cubes (about 1/4 inch). Set aside.
  3. In a large bowl, whisk together almond flour, cinnamon, baking soda, and salt.
  4. In a separate bowl, whisk together melted coconut oil, maple syrup, egg, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. The dough will be thick and slightly sticky.
  6. Gently fold in the diced apples (and any optional add-ins) until evenly distributed.
  7. Using a cookie scoop or spoon, portion the dough into 1.5-tablespoon balls and place them on the prepared baking sheet, spacing about 2 inches apart.
  8. Gently press down on each dough ball with the back of a spoon to flatten slightly (about 1/2 inch thick).
  9. Bake for 12-14 minutes, until edges are golden brown and centers look set. Rotate the baking sheet halfway through for even baking.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Use room temperature ingredients to prevent coconut oil from solidifying. Don’t overmix the dough. Let cookies cool completely for best texture. For vegan version, use a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water). For nut-free, use sunflower seed flour. Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
