Ingredients

Scale
  • 1 cup (2 sticks / 226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (240g) all-purpose flour
  • ¼ cup (20g) unsweetened cocoa powder (Dutch-process preferred)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon cayenne pepper (optional, for warmth)
  • 4 ounces (113g) Mexican chocolate (e.g., Ibarra or Abuelita), finely chopped
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed for 2-3 minutes until light, fluffy, and pale. Scrape down sides.
  3. Add eggs one at a time, beating well after each. Add vanilla extract and beat until smooth and glossy.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, cinnamon, and cayenne pepper.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  6. Fold in chopped Mexican chocolate and semi-sweet chocolate chips until evenly distributed. Dough will be thick and slightly sticky.
  7. Using a 1.5-tablespoon cookie scoop or heaping tablespoon, drop rounded balls of dough onto prepared baking sheets, spacing 2 inches apart.
  8. Bake one sheet at a time on center rack for 10-12 minutes, until edges are set and tops look slightly cracked. Centers will still look soft.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

For best results, use room temperature ingredients. Chop Mexican chocolate finely (pea-sized). Watch bake time closely; start checking at 9 minutes. If kitchen is warm, chill scooped dough for 15-20 minutes before baking. Cookies can be stored in an airtight container at room temperature for up to 5 days or frozen for up to 3 months.
