These Crock Pot Swamp Potatoes are an incredibly easy, cheesy, and creamy side dish made with frozen hash browns, cream cheese, cheddar, and a few simple seasonings. Perfect for potlucks, holidays, or busy weeknights, this slow cooker recipe delivers rich flavor with minimal effort.

  • 30 oz (850g) frozen shredded hash browns
  • 8 oz (226g) cream cheese, softened
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 cup (240ml) sour cream
  • 1/2 cup (120ml) whole milk
  • 1 can (10.5 oz / 298g) cream of chicken soup
  • 1/2 cup (50g) chopped green onions (scallions)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional pinch of cayenne pepper
  • 1/2 cup (50g) additional shredded cheddar cheese (for topping)
  • 2 tablespoons chopped fresh parsley or chives (for garnish)

Instructions

  1. Lightly spray the inside of a 6-quart slow cooker with non-stick cooking spray.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, milk, cream of chicken soup, garlic powder, onion powder, salt, pepper, and cayenne (if using). Whisk until smooth.
  3. Place frozen shredded hash browns into the slow cooker. Pour the creamy sauce over the top. Add 2 cups of shredded cheddar cheese and chopped green onions. Fold gently until all potatoes are evenly coated.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. Stir halfway through cooking.
  5. Check for doneness: potatoes should be tender and mixture hot and bubbly. If still firm, cook another 30 minutes.
  6. In the last 30 minutes, sprinkle additional 1/2 cup cheddar cheese on top. Cover and let melt until golden and bubbly.
  7. Turn off slow cooker and let rest for 5-10 minutes. Garnish with fresh parsley or chives and serve.

Notes

Do not thaw the hash browns; use them frozen. Soften cream cheese to room temperature for smooth sauce. Stir halfway through cooking for even heat distribution. For crispy edges, let them form along the sides and mix in before serving. Use full-fat dairy for best creaminess. To make gluten-free, use certified gluten-free cream soup. To make vegetarian, use cream of mushroom soup.
