  • 12 ounces cooked and shredded corned beef
  • 1 cup drained sauerkraut
  • 1 medium yellow onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1 teaspoon caraway seeds (optional)
  • ½ cup chicken or beef broth
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional sides: mashed potatoes or buttered egg noodles

Instructions

  1. Thinly slice the yellow onion and mince the garlic cloves. Shred or chop the cooked corned beef into bite-sized pieces. Drain the sauerkraut well.
  2. Heat 2 tablespoons of unsalted butter in a large skillet over medium heat. Add the sliced onions and cook for 5-7 minutes until translucent and soft, stirring occasionally.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Sprinkle in 1 teaspoon of caraway seeds and stir to coat the onions and garlic evenly.
  5. Add the shredded corned beef and drained sauerkraut to the skillet. Stir gently to combine without breaking up the sauerkraut.
  6. Pour in ½ cup of chicken or beef broth. Stir and reduce heat to low. Cover and simmer gently for 15-20 minutes to meld flavors.
  7. Taste and season lightly with salt and freshly ground black pepper, considering the saltiness of corned beef and sauerkraut.
  8. Sprinkle chopped fresh parsley over the top and serve warm, ideally over mashed potatoes or buttered egg noodles.

Notes

Drain sauerkraut well to avoid watery texture. Slow sauté onions to bring out sweetness. Add extra broth if corned beef is dry. For extra flavor, stir in a teaspoon of Dijon mustard at the end. Caraway seeds are optional but recommended for authentic flavor. Reheat leftovers gently with a splash of broth to keep moist.
