A quick and easy weeknight dinner featuring creamy alfredo sauce, tender chicken, and fluffy biscuit topping, all baked together in one dish for a comforting meal that comes together in about 30 minutes.

Ingredients

Scale
  • 3 cups cooked, shredded chicken (rotisserie chicken works perfectly)
  • 1 (15-ounce) jar alfredo sauce (preferably Rao’s or Classico)
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (16.3-ounce) can refrigerated buttermilk biscuits (8 count, like Pillsbury Grands)
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder (for biscuits)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred the chicken if not already done; set aside.
  3. In a large mixing bowl, combine alfredo sauce, chicken broth, garlic powder, black pepper, and red pepper flakes. Whisk until smooth.
  4. Add shredded chicken, spinach, and 1/2 cup of the mozzarella cheese to the sauce mixture. Stir until well combined.
  5. Pour the chicken mixture into a 9×13-inch baking dish or 10-inch cast iron skillet and spread into an even layer.
  6. Sprinkle the remaining 1/2 cup mozzarella and all of the Parmesan cheese over the top.
  7. Open the can of biscuits and separate them. Cut each biscuit into quarters. Arrange the biscuit pieces evenly over the top of the chicken mixture without pressing them down.
  8. Bake for 18-22 minutes, or until biscuits are golden brown and cooked through and the filling is bubbly around the edges.
  9. While the dish bakes, melt the butter and stir in the 1/2 teaspoon garlic powder.
  10. When the bake comes out of the oven, brush the melted butter mixture over the tops of the biscuits. Sprinkle with fresh chopped parsley.
  11. Let the dish rest for 5 minutes before serving.

Notes

For best results, do not push biscuits into the sauce; place them gently on top. Let the dish rest for 5 minutes after baking to allow the sauce to set. If biscuits brown too quickly, tent loosely with foil. Use room temperature biscuits for even baking.
