A warm, comforting breakfast bowl made with creamy quinoa, burst blueberries, and a drizzle of honey. Ready in under 15 minutes, it’s protein-rich, naturally sweet, and perfect for busy mornings.

  • 1 cup cooked quinoa (about 1/3 cup dry)
  • 1/2 cup milk of choice (whole milk, oat milk, almond milk, or coconut milk)
  • 1/4 cup water
  • Pinch of salt
  • 1/2 cup fresh or frozen blueberries
  • 1 teaspoon lemon zest (optional)
  • 1 to 2 tablespoons honey (or maple syrup for vegan)
  • Optional toppings: chopped nuts (pecans or walnuts), cinnamon, Greek yogurt, almond butter

Instructions

  1. If cooking quinoa from scratch, rinse 1/3 cup dry quinoa in a fine-mesh strainer under cold water for 30 seconds. Combine with 2/3 cup water in a small saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork. Set aside.
  2. In the same saucepan, combine the cooked quinoa, milk, and water. Add a pinch of salt. Place over medium heat and stir gently until steaming, about 2 to 3 minutes. Do not boil.
  3. Stir in the blueberries. If using fresh, warm for 1 minute; if frozen, warm for 2 to 3 minutes. Stir gently until berries soften and release some juice.
  4. Check consistency: add more milk if too thick, or cook uncovered for 1 minute if too thin. The quinoa should be creamy but still have texture.
  5. Remove from heat. Drizzle honey over the top and stir once or twice to incorporate, leaving some streaks visible.
  6. Pour into a bowl. Add optional toppings (nuts, cinnamon, yogurt, almond butter) and serve immediately.

Notes

For best texture, do not overcook the quinoa. Add blueberries at the end to keep them from turning mushy. Use low heat for the milk to prevent scorching. Toast dry quinoa before cooking for extra nutty flavor. This dish is best served fresh; leftovers can be stored in the fridge for up to 3 days but blueberries will break down.
