  • 10 oz (283 grams) marshmallows (mini or regular)
  • 4 tablespoons (56 grams) unsalted butter
  • 1 cup (240 ml) caramel sauce (store-bought or homemade)
  • 1 cup (120 grams) chopped pecans, toasted
  • 1 cup (170 grams) chocolate chips (semi-sweet or milk chocolate)
  • 1 teaspoon vanilla extract
  • Optional: pinch of sea salt for sprinkling

Instructions

  1. Lightly grease a 9×13-inch pan with butter or line it with parchment paper and set aside.
  2. In a medium saucepan over low heat, melt 4 tablespoons (56 grams) of unsalted butter.
  3. Add 10 ounces (283 grams) of marshmallows to the melted butter and stir continuously until completely melted and smooth, about 5-7 minutes.
  4. Remove the pan from heat and stir in 1 cup (240 ml) of caramel sauce and 1 teaspoon of vanilla extract until fully combined and glossy.
  5. Immediately pour the marshmallow-caramel mixture over 6 cups (180 grams) of Rice Krispies cereal in a large bowl.
  6. Gently fold in the cereal until evenly coated, then add 1 cup (120 grams) of toasted chopped pecans and 1 cup (170 grams) of chocolate chips, folding just enough to combine without melting the chips completely.
  7. Transfer the mixture to the prepared pan and press evenly and firmly using a buttered spatula or wax paper, avoiding over-pressing to maintain chewiness.
  8. Let the pan sit at room temperature for at least 1 hour to set, or chill in the refrigerator for 30 minutes if in a hurry.
  9. Once set, slice into bars or squares with a sharp knife, wiping the knife with a warm damp cloth between slices for cleaner cuts.

Use low heat when melting butter and marshmallows to avoid burning. Use thick caramel sauce to prevent stickiness. Toast pecans lightly for extra flavor.
