Cheesy Baked Pizza Tortellini Casserole

A quick and easy 30-minute casserole that combines cheese-filled tortellini with marinara sauce, mozzarella, and pepperoni for all the flavors of pizza night without the hassle of rolling dough.

  • 20 oz cheese tortellini (refrigerated)
  • 24 oz marinara sauce
  • 2 cups shredded mozzarella cheese (whole milk)
  • 4 oz pepperoni (sliced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil for garnish (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, toss the cheese tortellini with marinara sauce, Italian seasoning, garlic powder, and red pepper flakes (if using) until evenly coated.
  3. Spread half of the sauced tortellini evenly into a greased 9×13-inch baking dish.
  4. Sprinkle 1 cup of shredded mozzarella over the first layer, then top with half of the pepperoni slices.
  5. Add the remaining tortellini on top, then sprinkle with the remaining 1 cup of mozzarella and the rest of the pepperoni. Press down lightly with a spatula.
  6. Cover the dish tightly with aluminum foil and bake for 20 minutes.
  7. Remove the foil carefully and bake for another 8-10 minutes, until the cheese is bubbly and golden brown.
  8. Let the casserole rest for 5 minutes before serving. Garnish with fresh basil if desired.

Notes

Use fresh or frozen tortellini, not dried. Let the casserole rest for 5 minutes after baking to allow the sauce to thicken. For a meatier version, add cooked Italian sausage or ground beef. For a vegetarian option, load with mushrooms, bell peppers, and olives. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
