A refreshing and creamy vegan acai bowl made with frozen watermelon and banana, perfect for hot days. This quick and easy breakfast comes together in under 10 minutes and is packed with hydrating watermelon and antioxidant-rich acai.

  • 1 large frozen banana (about 120g), peeled and sliced
  • 2 tablespoons acai powder (about 10g)
  • 1/4 cup coconut water (60ml)
  • 1 tablespoon maple syrup (15ml), optional
  • 1 teaspoon lime juice (5ml)
  • Pinch of sea salt
  • For the topping (optional): granola, fresh berries, shredded coconut, chia seeds, sliced banana or kiwi

Instructions

  1. Prep your watermelon: Cut a seedless watermelon into 1-inch cubes. You’ll need about 3 cups. Spread the cubes in a single layer on a baking sheet lined with parchment paper. Freeze for at least 2 hours, or overnight.
  2. Freeze your banana: Peel a ripe banana, slice it into coins, and freeze them on the same baking sheet. This takes about an hour.
  3. Gather your ingredients: When you’re ready to make the bowl, take the frozen watermelon and banana out of the freezer. Measure your acai powder, coconut water, maple syrup, lime juice, and salt.
  4. Blend the base: Add the frozen watermelon chunks, frozen banana slices, acai powder, coconut water, maple syrup, lime juice, and salt to your blender. Start on low speed and gradually increase to high. Stop and scrape down the sides as needed.
  5. Adjust consistency: If the mixture is too thick and your blender is struggling, add another tablespoon of coconut water at a time until it starts moving. You want a thick, scoopable consistency—like soft serve. If it gets too thin, add a few more frozen watermelon chunks.
  6. Check sweetness: Taste the mixture. If it needs more sweetness, add a tiny bit more maple syrup or another slice of frozen banana. If it’s too sweet, a squeeze of extra lime juice will balance it out.
  7. Assemble the bowl: Divide the mixture between two bowls. Use a spatula to spread it evenly, creating a flat surface for your toppings.
  8. Add toppings: Sprinkle granola over the top, then add fresh berries, shredded coconut, chia seeds, and any other toppings you love. Arrange them in little sections for a picture-perfect look.
  9. Serve immediately: Eat the bowl right away while it’s still cold and thick.

Notes

Freeze watermelon chunks in a single layer to prevent clumping. For best texture, use a high-speed blender. If using a standard blender, pulse frozen fruit first to break it into smaller pieces. Don’t over-blend to avoid melting the fruit. The bowl does not store well once assembled; freeze the blended base (without toppings) for up to 1 month.
