This Ultimate Chili Cheese Dip is a quick and easy crowd-pleaser, ready in under 15 minutes. It’s rich, creamy, and loaded with savory, cheesy goodness, perfect for game day, parties, or any occasion.

Ingredients

Scale
  • 1 can (15 oz) chili with beans
  • 8 oz cream cheese, softened
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ cup sour cream
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Optional toppings: chopped green onions, diced jalapeños, fresh cilantro, or a drizzle of hot sauce

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 20 minutes, or microwave for 10-15 seconds on low power.
  2. Heat the chili in a medium skillet over medium heat, stirring occasionally, until hot and bubbling, about 3-4 minutes.
  3. Add the softened cream cheese to the hot chili and stir continuously until fully incorporated and smooth, about 2 minutes.
  4. Stir in the sour cream, chili powder, garlic powder, and onion powder. Taste and adjust salt and pepper as needed.
  5. Reserve ¼ cup of shredded cheese for topping. Add the remaining 1 ¼ cups to the skillet and stir gently until fully melted and smooth, about 2-3 minutes.
  6. Sprinkle the reserved shredded cheese over the top. Cover the skillet with a lid or foil for about 1 minute to melt the cheese. Remove from heat, add optional toppings, and serve immediately.

Notes

For best results, shred your own cheddar cheese from a block to avoid anti-caking agents that affect melting. Keep heat low when melting cheese to prevent greasiness. Let the dip rest for 2-3 minutes before serving to allow flavors to meld. To keep warm for parties, transfer to a small slow cooker set on warm.
